Tools: Baking Pan (7.75 x 3.75 x 2.5 in) https://amzn.to/49YIjLw Ingredients: Meatloaf 1/2 cup (30 g) panko breadcrumbs 3 tablespoons (45 ml) milk 1 small onion, small diced 1 tablespoon (15 g) butter 1/4 cup frozen veggies (peas, carrots, corn) 250 g ground beef 250 g ground pork 1 large egg 1 teaspoon fine salt 1/4 teaspoon black pepper 1/4 teaspoon nutmeg 7 bacon strips 5 quail eggs Sauce 1/2 cup (120ml) drippings 3 tablespoons (30g) salted butter 2 tablespoons (30 ml) ketchup 1/4 cup (60 ml) Bulldog Worcestershire sauce/Chuno sauce 1/4 cup (60 ml) red wine 1. Combine panko and milk together in a small bowl, set aside to hydrate. 2. Melt butter in a small frying pan on medium heat, then add onions and cook until caramelized, around 5 minutes. Add frozen veggies and cook until water evaporates, around 3 minutes, then set aside to cool. 3. In a large mixing bowl, add ground beef, ground pork, egg, fine salt, black pepper, nutmeg, hydrated panko, and cooked veggies. Mix thoroughly. Optionally, fry a small amount to test seasoning. 4. Line a baking pan with strips of bacon, slightly overlapping. Fill halfway with the ground meat mixture, place quail eggs lengthwise in the center, cover with remaining meat mixture, and fold bacon over to cover. 5. Cover the meatloaf with foil and bake at 350F for 55 minutes, or until the liquid runs clear and the internal temperature reaches 145F. 6. Increase the oven temperature to broil. Move the meatloaf to an oven sheet tray, reserve drippings, pat the meatloaf dry with a paper towel, and strain the drippings. 7. Place the meatloaf back into the oven for 5 minutes or until bacon turns dark red. Remove and let rest. 8. For the sauce, combine strained drippings, salted butter, ketchup, Bulldog sauce, and red wine in a saucepan. Cook on medium-high heat until thickened, around 8 minutes. 9. Slice the meatloaf into 10 pieces and serve with the sauce drizzled on top.
