1: Preheat oven to 400°F (200°C). 2: Line an aluminum tray with parchment paper. 3: Pat the Cornish hen dry inside and out with paper towels, and place on the prepared tray. 4: In a bowl, combine butter, spring onions, garlic, ginger, and salt. Place in a piping bag (optional). 5: Place a finger between the breast and the skin of the Cornish hen to create space for the butter. Repeat for the chicken thighs. 6: Squeeze the piping bag of butter in between the meat and skin of the chicken breast, then repeat for the legs. Place any remaining butter inside the cavity of the hen. 7: Thoroughly wash the leeks before inserting one leek through the neck and cavity of the hen. Trim if too long. 8: Salt the exterior of the chicken and bake for around 1 hour and 15 minutes or until the instant read thermometer reads 165°F (73.9°C). 9: Remove from the oven, discard the cooked leek, and place a new leek inside the hen for a more beautiful appearance, trimming excess if necessary.
