A delicious beef garlic butter fried rice recipe inspired by the anime Kakuriyo: Bed and Breakfast for Spirits, featuring Angus beef chuck flat, day-old sushi rice, crispy garlic chips, and a savory tonkatsu-soy sauce.
1. Remove excess fat off the Angus Beef Chuck Flat, and reserve for cooking. Cut into 1/3 inch thick rectangles.
2. Heat a cast iron pan, or griddle, on medium-high heat. Once hot, add 1/2 tablespoon of canola oil and fry the beef with a sprinkle of salt and pepper. Cook until browned, around 4 minutes per side.
3. Turn off the heat and let residual heat melt reserved beef fat and butter. Add thinly sliced garlic and fry until golden brown, around 3 minutes. Once crisped, place on a plate and set aside for serving.
4. Increase the heat to medium, then add day-old cooked sushi rice. Carefully separate the rice grains using a spatula, and season with salt and pepper. Fry the rice until warmed through and glossy from the garlic oil and butter, then add half of the fried garlic chips and mix until incorporated. Place onto a plate for serving.
5. To make the sauce combine soy sauce, sugar, and tonkatsu sauce in a small pot and heat on medium-high. Meanwhile, In a small bowl combine water and cornstarch together. Once the soy sauce mixture comes to a simmer, slowly whisk in the water and cornstarch mixture, then boil until thickened, around 1 minute.
6. To serve, place cooked beef on top of the fried rice, followed by the sauce, remaining garlic chips, and a sprinkle of chopped green onion. Enjoy!
