Preheat oven to 400F (200C) convection. 2. Prepare your chicken by removing all innards and any extra overhanging fat. Pat the chicken dry with paper towels. Sprinkle herb salt and poultry herb seasoning on and inside the chicken. 3. Stuff the cavity of the chicken with shrimp fried rice. The anime uses frozen fried rice, but be sure to thaw it out to room temperature before doing so. 4. Use bamboo skewers to to secure the cavity closed. Tie the legs together using twine. 5. Drizzle olive oil on top of the chicken and brush on all surfaces. 6. Bake the chicken for 1 hour, then increase the oven temperature to 450F and cook for another 20 minutes, or until chicken has browned and has reached an internal temperature of 165F (74C). Brush the chicken with its drippings every 20 minutes. 7. Serve immediately.
