A flavorful Japanese-style curry recipe inspired by the anime One Piece, featuring tender marinated beef, caramelized onions, a rich dark roux, and hearty vegetables like potatoes and carrots.
1. Marinate the beef with 1-2 tsp garlic, 1 tsp ginger, 1 tsp turmeric, 50g greek yogurt, salt, and pepper. Let it rest in the fridge before cooking.
2. Slice an X in 5 tomatoes and boil for a few seconds until the skin peels away. Remove the seeds and liquid.
3. Caramelize 1 onion by cooking on medium heat with 1-2 tbsp oil until softened, then cook on low heat until they become brown.
4. For the roux, combine 60g fat (lard or bacon) and 60g all purpose flour. Cook on medium heat until the color turns brown, stirring frequently. After that, add 2-3 tbsp curry powder and 1 tbsp garam masala, combine, and remove from heat.
5. Add 3-4 potatoes and 2-3 carrots in a pot, add enough water to cover. Set heat to medium-high.
6. Once everything is simmering, add all other ingredients: the dark roux, 500ml chicken stock, prepared tomatoes, caramelized onions, marinated beef, 1/2 grated apple, and season with salt and pepper.
7. After boiling, lower the heat to medium-low and cook until the beef is tender. Remove foam and fat from the surface.
8. Add some potato starch dissolved in water to thicken if necessary.
