1: Start the cookie recipe: mix butter and sugar until pale and thickened with a hand mixer with a beater attachment, around 3-4 minutes on medium speed. 2: Add egg and vanilla, and mix until fluffed and doubled in volume, around 5-6 minutes on medium-high speed. 3: Add all purpose flour, baking powder, and a pinch of salt, and mix until incorporated (do not over mix) mix on medium speed for around 3 minutes. 4: Add in chocolate chips and mix with a spatula just until combined. 5: Divide the dough into 4 to make 4 jumbo Guoba cookies. 6: Take 1 of the dough and roll out to make a circular head and 2 ears. Press your cookie to a thickness of 1/3 inch, then with your thumb, press down to make an indent for the marshmallow. Repeat for the remaining 3 dough. 7: Freeze the dough and marshmallow together until solidified or frozen. 8: Bake in the oven at 350F for 12 minutes total, or until lightly browned at the bottom and marshmallows have turned a light brown color. 9: Once cooled, decorate the face details using melted chocolates.View original recipe
