What you need

fl oz olive oil

fl oz sour cream

fl oz worcestershire

fl oz beef stock

tsp garlic powder

tbsp tomato paste

tbsp dill

tsp smoked paprika

tsp black pepper
tsp salt
Instructions
1: In a medium sized mixing bowl, add all Beef Preparation ingredients. Mix until all surface area of beef is covered in flour. Dust off excess flour. 2: Heat a large pot on medium heat. Once hot, add in olive oil. Once oil becomes hot and glossy, add in the prepared beef. Cook until all sides of the beef have been browned (4-5 min) and remove from heat into a clean bowl. 3: Turn the heat down to medium-low. Add onions, and cook until translucent (2 min) then add garlic & sauté until fragrant (1 min). Add tomato paste & scrape the fond (brown bits at the bottom of the pot) and combine. Add in bell pepper and sauté until slightly softened (2 min). Add the browned beef back in, beef stock, enough water to cover the beef, worcestershire, & bay leaf. Stir, and cover with a lid. Turn heat up to medium. 4: Once boiling, remove scum off the surface using a skimmer or a spoon. Turn heat to medium-low to achieve a slow simmer, place the lid back on. Cook for 30 min stirring occasionally. 5: Once the beef has softened, add potatoes. Cook covered for 5 min, still stirring occasionally, then add in carrots, & cook for another 12 min, until tender or until desired doneness. 6: Once the potatoes and carrots have cooked, remove the bay leaf & add in sour cream & fresh dill. Taste, & add salt and pepper if needed. Serve in a bowl with toppings!View original recipe
